I saw someone had removed it on a website I was reading the other day, what does it do and what benefit would be gained by removing it ?

its part of the emissions control
Removing it wont yield any noticeable performance improvements. Most people do so just to cut some weight and reduce clutter around the bike and engine. Should also reduce the amount of backfiring and popping when decelerating. Rottweiler Performance offers various stages of canister removal kits for larger KTM twins. The bike will throw a FI light if you remove the canister without one of these kits.
